g'morning, kids! So, I finished reading The Divine Secrets of the Ya Ya Sisterhood for the 84 thousandth time Friday and decided that I absolutely had to have crawfish ettouffee. Of course this is not crawfish season so I decided an acceptable substitute would be lobster! After all, what are crawfish? They're little lobsters! For the fourth time in the past year, I cooked last night. The roux was a little watery, but overall it turned out yummy. The next time, I plan to perfect the recipe and post on the recipe thread.

Mmmmmmmmm sounds yummy. I spatchcocked a chicken last night and it's been marinating in an herb rub. I hope so! We picked up the standard tillamook sharp cheddar and an aged Australian white cheddar for the cheese sauce.
