What's for dinner?

I'm currently preparing an old favorite: chicken creole. I've started cooking a lot more since going on Weight Watchers.

Sounds good. Recipe?

Not sure how close it is to true chicken creole, but it's easy to make. Basically just a chicken breast, a 14 oz can of diced tomatoes, onion, green pepper, and celery. Oh, and some garlic. Cook the chicken and chop it up; season it with cajun seasoning. Saute the onion, pepper, and celery. Add the tomatoes and about a half can of water. Season to taste (I add a dash of ground red pepper). Throw in a bay leaf or two and simmer it until all of the water cooks out.

Leftovers from 12 Bones from a late lunch today: blueberry chipotle ribs, pulled pork, rosemary cornbread, baked beans, corn pudding and jalapeno cheese grits and collards. I tasted the collards to see if I despised them as much as I remember. The answer is yes.

Grilled salmon, baked sweet potato and salad. We ate at The Cutting Board in Burlington. Max, Dawn and Mark are here this weekend. Our friend, Jim, went to dinner with us. Very nice time.

I also baked my first loaf of bread today, a five grain whole wheat loaf. It came out a bit dense but otherwise is moist and delicious. Yay baking.
