How do you prefer your steak?
I'm sure we've covered this before, but I need to poll something and Tilly inspired this so sooooooooo, let's talk.
I prefer my steak medium-rare, but I'll go with rare on occasion if the mood strikes. I like beef carpaccio too.

Ever since my first pregnancy and the doctor's warning about the danger of undercooked meat to the fetus, I've ordered my steaks "medium well."
Prior to that, I always liked my beef a little to the moo side of medium.

My parents always fixed steaks beyond well done, so that's what I grew up with. I wondered why people raved over steak and to me they tasted like charcoal. Once I tried a steak medium rare, I saw what all the fuss was about.

Medium rare steak is not dangerous at all to a fetus. The thing that is dangerous to you and your baby is the bacteria that can accumulate on the outside of the steak during handling and preparation. It doesn't penetrate the steak. As long as the outside is well seared, you're safe. The real danger is ground beef, because the increased surface area makes the whole thing "the outside", unless the restaurant grinds it itself with a sterile meat grinder RIGHT before forming the patty and cooking it. Like I said, steak is safe as long as the outside is seared, killing the bacteria. Can't say the same for chicken or pork. Those need to be fully cooked for other reasons, like salmonella and trichinosis. I like mine just a TICK under medium rare. However, most places that aren't TRUE steakhouses don't know how to cook a steak, so I order rare at a lot of those places to make sure I get medium rare.

Nicely marbled, 1and 1/4 to 1 and 1/2 inches thick, properly seasoned and char crusted, New York strip or rib-eye, medium rare.

I like it medium to medium-well. As a kid I was well done only, so I'm improving.
I also like my pork medium-well. There's not much of a need to cook pork to well done anymore.
