Humble Pie....
Breakfast = cereal with banana and coffee
Lunch = salad - ok but bland because the cafeteria salad bar had no broccoli...and instead of fresh sliced carrots they had these anemic orange cubes - which appeared to be cooked and mushy.
Dinner - chicken parm. Yum.

The potatoes are baked, halved and then scooped out of the skins, mashed coarsely and mixed with cream and cheese, then scooped back into the skins, topped with more cheese, and then baked some more. I have always referred to your description as twice-baked or stuffed potatoes.
