A few thoughts on themes:
1) An old west type set up?
2) Weather related.... Chili today, hot Tamale
3) And my favorite.... A Hell Theme... complete with a BLUE Devil! lol chili so good, it made the devil blush blue!~

Great ideas! Thanks knigths68. The Cookoff is April 17th ath Historic Depot at Town Square in Belton, SC so I've got about 4 months to figure out the theme/team name.

I will definitely be making many many test batches. Hopefully I'll get the equipment ready in time for a brunchgate. Chili will take about three hours to cook, but I will definitely be able to prep things first (precut the meat, the onions, the chili peppers, the garlic); just gotta figure out the cooking time. Maybe I could setup an hour early. What is the earliest I can arrive to tailgate?

I used to arrive 4 hours early for some big games last year, but being that we are in the new Devil's Alley this year I'm not sure that will work. I beat the parking lot attendants to some games last year. Pokey bastages.
Duke born, Duke bred, cooking on a grill so I'm tailgate fed.

Four hours would be perfect. The International Chili Society sets a time minimum of 3 hours and maximum of 4. I'd love to take full advantage of those four hours. Otherwise, I'm afraid that I would have to prepare a full batch offsite, and then bring it out to warm and finish for an hour or so. Hey, that may not be such a bad idea. Chili is always better one day later.

I concur with that thought!
