Humble Pie.... =))

Breakfast = cereal with banana and coffee
Lunch = salad - ok but bland because the cafeteria salad bar had no broccoli...and instead of fresh sliced carrots they had these anemic orange cubes - which appeared to be cooked and mushy. :ymsick:
Dinner - chicken parm. Yum.

What are smashed potatoes? Are they mashed potatoes prepared when you are particularily peeved?
(Crapola, coulda used a Hulk icon there, but there ain't one.)

The potatoes are baked, halved and then scooped out of the skins, mashed coarsely and mixed with cream and cheese, then scooped back into the skins, topped with more cheese, and then baked some more. AKA twice-baked potatoes. They're fucking phenomenal.

I have always referred to your description as twice-baked or stuffed potatoes. When I mention smashed potatoes, I am referring to mashing the the whole potato (carving out the "eyes" or "ruts" [southern for "roots" :)) =)) ]) and then adding cheese and/or bacon pieces to the final presentation.

Some a fold chunks of crisp fried bacon into the twice baked before it goes into the oven the second time .... elevating the humble potato to truly marvelous.
