I shall try to get around to posting recipes from the vacation, but here's a rundown of some of the food we prepared and enjoyed at the condo:
Breakfasts
Baked gruyere and banger omelette.
Fresh fruit salad with vanilla yogurt
Lunch
Taragon chicken salad with roasted cashews
Roasted asparagus and pepper salad with a dijon dressing
Dinner
We went out for dinner one night. I had the pan seared duck with a balsamic reduction served on top of greens. Kelly had the scallops.
Friday night I made paella with chicken, chorizo, shrimp, clams and lobster. That was a lot of fun despite trying to cook on an electric stove. There's still some leftover paella. Mmmmm lunch.

lunch: bottled water (ymm, water... ), a cereal bar and some mini-Ritz Bitz (PB, no jelly :roll: )

Lunch: reheating a couple of the marinated pork tenderloin sandwiches and will reheat a bowl of chicken noodle soup, skim milk

Breakfast: a banana in the car on the way to a doctor's appointment...oh yeah, and coffee in the cup holder.
Lunch: A Granny Smith and a cup of blueberry tea
Dinner: Pure comfort food. Meatloaf (I do make the best meat loaf), baked mac and cheese and mixed veggies.
