Also, I don't know if any of the food pantries in your area do this but Manna House in Pensacola, FL installed an urban garden instead of replacing one of their warehouses. One of the folks running it was actually an archeology major. Here is their website: http://www.mannafoodpantries.org/gardens.html. Perhaps there is a similar organization closer he can check out.
