Technically, discussions of casserole apples should be part of another thread, like "Your favorite cooking apple." :-B

Having said that, did she use Granny Smiths or Romes?

But we snacked on the casserole. So were the cooking apples transformed into snacking apples in the baking process?

Recipe to follow.

She used 4 Granny Smith and 1 Gala apple (because she thought 4 apples were not enough and the Gala was the only extra we had).

Tried an Arkansas Black today, and then bought a bushel. Sweet, softer side of crisp, low on the tartness scale.
