I would add that it also depends on the setting for fried chicken and fingers. Look to the hostess. As a hostess, you set the standard. Fried chicken should be eaten sans knife & fork.

I was wondering when I'd get some love for the oyster! captmojo came through!

I wonder if I can buy a dozen roasters, extract the oysters from them and then break them down and freeze the parts. Then I could come up with some yummalicious oyster recipe.

No ma'am. We are talking about the very best part of the chicken, the oyster. You can find them on the back of your bird, behind the thighs on each side of the spine. For those of you who don't know, you need to get into the know.

I searched for a good link and I couldn't find one that satisfied my needs. Here's a link that describes the oyster and how to remove them as part of the leg quarter. I'm not a fan of this approach. I like to roast the chicken, break it down, and then savor the oysters all on their own.

I am tempted to go out and get a chicken just to find this oyster, however, with all the snow coming this way, the chicken shelves at the grocery store are bare :( , but once this mess passes, I will have to try to find it. Chefs often say that the oysters are the best bits of meat in the chicken. I have yet to remember to pay attention as I eat the chicken to see if I can notice any difference: most of the chickens I've eaten since I learned about the oysters have been eaten in about 30 seconds, standing up with a plate in one hand and chunks of chicken held caveman-style in the other hand, with someone yelling at everyone to get working on the next thing or clean up the kitchen so we can go home.

I use my thumb to pop out the oyster. Roast, rest and then carve your bird. Once you've broken it down, flip it over so you're looking at the back of the bird, then remove any skin. This will reveal the oysters! Enjoy!
