I love the whole bird, but the best part is the oyster.

I'm also a big believer in frugal cooking and using as much of the animal as possible. Guts ands stuff are sauteed/roasted and then added to gravies. Carcasses are used to make chicken stock. We roast at least one chicken a week and we have a constant supply of fresh chicken stock in the fridge.

When I was young, I LOVED chopped liver, and schmaltz was great.

I like all 4 parts that are normally served at "normal" chicken restaurants. Don't want none of those (Southern) innerd thingies. I usually choose the breast and wing, but if they are dry I'll eat the leg and thigh. When we get the 8-piece box at Bojangles, Mrs. Ozzie eats the two breasts and I get all the rest (usually finishing the leftovers as lunch the next day).

It depends on how it's prepared. Baked will get me using a knife and fork while fried chicken requires no utensils at all.
