Oh, I know. I was summoning 9-1-1 for the heart attack that would follow the inevitable consumption of large quantities of that Mac & Cheese casserole that contains about 50% more cheese than my wife's recipe to which I am already totally addicted. Yours also has cream and whole milk in it and hers has a small amount of a white sauce made with flour and 1% milk. I invariably eat about 4 servings of it when she prepares it. =p~

EarlJam's Southern Baked Tater Tots!

1. Remove tater tots from bag and place on baking pan.
2. Heat oven to 425 degrees.
3. Place pan in oven.
4. Heat for 35-40 minutes or until golden brown.
5. Remove from oven.
6. Pour tater tots on plate.
7. Serve with ketchup or favorite condiment.
8. Eat tater tots.

Okra

Anybody got tasty recipe for okra other than gumbo or deep frying the stuff? I've just gotten in to them, but have mostly been eating them raw with a bit of salt on them.

What he said. Would not go so far as to say I love fried okra but I would eat a portion of it if served to me and might even have it from a buffet line. Folks have snuck a morsel or two of boiled/stewed okra past my lips in a gumbo or soup but I'm with CB&B. Slimy.

Not to mention prickly. :Stop: However, this from "Nothin' Finer", the Chapel Hill Service League cookbook, might actually be pretty good.

Tomato-Okra Bake
1/4# regular or lowfat turkey bacon
1 medium onion, chopped
1# okra, trimmed and sliced
1 small green pepper, chopped
2T. instant rice
1 16-oz. can whole tomatoes with juice
1T sugar
1/4 t. garlic salt
1/4 t. pepper
1T. Parmesan cheese, grated
1T butter, melted
3/4 C. dry, Italian style bread crumbs

-------------------------
Cook bacon until crisp. Drain, crumble and set aside. Pour off all but 2T drippings.

Saute onion, okra, and green pepper in the drippings until soft. Place okra mixture into a lightly greased 2 qt. casserole. Add instant rice and bacon. Mix well.

In a blender, combine the tomatoes with the juice, sugar, garlic salt , and pepper. Blend until smooth. Pour over the top. Bake uncovered at 350 degrees for 45 minutes. Serve hot.

Quote at the end of the page says "We eat alot of okra in North Carolina. This is one of our favorite recipes."

PS Bet if you replaced the canned tomatoes with a pound of beauties from "Shelton Farms" it would be a winner!

I like the sounds of this recipe. With baking it for 45 min., there is no way the okra can be slimy. I hope to try it soon. Yes Ima, with our home grown tomatoes. :D

Pickled okra is delicious. Give it a try unless you're not a fan of pickles.
Do you like Indian food? It's the only international cuisine I can remember featuring okra.

If you're enjoying eating them raw with only a little salt, you might enjoy them sauteed. Try parboiling them for 2-3 minutes. Meanwhile, get a pan medium hot with olive oil and sliced garlic. Saute the garlic while the okra boils, then discard and reserve the oil. Drain the okra, and turn the heat up high and give them quick saute. Maybe serve with a squeeze of lemon.

Note: I've never tried this so I'm not aware of the results, the key will be to keep the cooking time fast and hot to keep the slime from forming. Let me know what you think!

Thanks--it's too hot to turn on the oven, so I just dumped it all into my cast iron skillet for a bit (minus the bacon, rice, and bread crumbs). Turned out really nicely. I added some cayenne for kick and interest :D

Will try Miles's suggestions next week.

Pickled okra are delicious.

I'll echo Miles. Indian restaurants make some killer okra. Google "bhindi masala" and you'll find a bunch of recipes. It's a stew of okra, tomato and onion.
