What are you cooking?

I bought a 3.5 lb chuck roast this morning that I am going to throw on the Brinkman tomorrow morning for a nice low and slow cook over charcoal and pecan wood. The finished product will be divided and used for two meals:

1. Pulled beef sandwiches on onion buns.

2. Shredded beef enchiladas.

What are you cooking this weekend?

Burgers, with grilled zucchini, yellow squash and onions.

I also bought some fresh strawberries and blueberries for a dessert.

California Chicken - marinated in lime juice/olive oil/garlic, topped with tomato slices, monterey jack cheese, and avocado slices. Fruit salad, potato salad, and some kind of dessert. May use turkey breast instead of chicken.

Popovers with strawberry butter for Stephen's birthday breakfast tomorrow.

We have friends coming down for the weekend.

Saturday- ribs, baked beans, mac and cheese, cheddar jalepeno corn bread
Sunday- seafood boil with snow and king crab legs, shrimp, little potatoes and corn on the cob
Monday- burgers, hotdogs, more baked beans and mac and cheese

Baby back ribs, oven fried potatoes, spinach with fresh garlic and a little bit of fresh diced tomatoes. Ima, strawberry short cake sounds wonderful.

I like to do slow cooker pulled pork, too. I use a boneless pork shoulder cut into 2 inch cubes. Sear the cubes in a little canola oil then put them into the slow cooker. Cover them with either Scott's or George's vinegar bbq sauce. Add enough hot water to immerse the cubes and let it go on high for at least 4 hours. When it's done, I shred the pork in a bowl and add back some of the liquid from the slow cooker, otherwise, it's too dry since its a lean cut of pork.

Sirloin on the grill, biscuits, maple syrup bacon brussel sprouts, and my garlic cheddar bacon mashed potato casserole. Followed by some wattamelon roll, one of my favorite desserts.
