Squash casserole.

Possibly a fruit? (not that there's anything wrong with that)

I do love me some green bean casserole, but the last two years, I've made a Jiffy corn pudding that's been the hit of the dinner. Nom nom nom nom.

In case anyone needs the recipe...there are a number of variations, but this is the version I make (clearly, not for those on a diet, though even my stepdad's having for some inexplicable reason bought fat free sour cream could ruin this treat):

1 box Jiffy cornbread mix
1 can kernel corn
1 can creamed corn
8 oz sour cream
1 stick butter
2 eggs

Melt butter in a large bowl, then mix with rest of ingredients, pour into a 2-qt casserole and bake at 350 for 30-40 minutes. Devour.

You're absolutely right. I make this when we need soothing. It's the quintessential comfort food!
