Salsa: the condiment

It has come to my attention that one of the best condiments ever created, salsa, has been systematically ignored in some of the discussions.
PEACH SALSA from ABBOTT'S FARM. YUMM!! In the shadow of the Gaffney Peach. Top that!!

During one of my trips to Las Vega, I went on a tour of the Ocean Spray factory there. Among the items to taste in the factory store at the end of the tour was a cranberry salsa..... it was absolutely fabulous! Right up there with peach salsa and corn and black bean salsa.

1 bag of frozen tilapia filets, thawed.
1 egg
several pieces of old bread, chopped into crumbs (I use the Cuisinart hand chopper)
Italian seasonings
Dip the tilapia filets in egg, then dredge them through bread crumbs that you've seasoned with Italian herbs. Bake at 350 to your desired level of crispiness. (I let mine go about 25 minutes.)
After baking, top with mango salsa:
1 mango, diced
1/2 cup red onion, diced
2 Tbsp jalapeño, seeded, minced (optional, depending on how spicy you like your salsa)
1/2 cup cucumber, peeled, diced
1/2 cup red pepper, diced
1/2 cup tomatoes, diced
1 Tbsp fresh cilantro, chopped
3 Tbsp lime juice
2 tsp apple cider vinegar
1/2 tsp sugar
1 tsp olive oil
Salt and pepper to taste

I love salsa and I love making it. When pico de gallo is done right, it is simply amazing, but I also enjoy the fruit salsas on fish. My favorite to prepare and back is a smoked tomato and black bean salsa. I started working on this when I first started smoking tomatoes for my chili. Mmmm mmm good. I will see if I can post a modified version in the recipe thread.

Parmesan cheese and mango salsa. Hmmmmmmmm. I'll skip the breading and grill the tilapia. Actually, I've burned out on tilapia, I'll go with grilled halibut or Chilean sea bass.
