Pinto beans and cornbread

Pinto beans and cornbread is my favorite food when it snows. I also chop a sweet onion and put out a jar of jalapeno peppers. Yum. I also like beef stew and chicken and rice soup when its really cold. Cornbread with these too is a must.

Sweetie Pie makes this combo often, I am not a fan however. I prefer my pinto beans in a burrito.

Pintos and rice are a great combination, too. Especially if the beans are smothered with white cheddar or Jack cheese with a shot or two of Texas Pete. I'll take a scoop or three of pintos on a taco salad with a few jalapeno slices scattered about the plate/bowl also.

I, too, have been craving pinto beans and cornbread and am planning to cook some for tomorrow. It's something that requires a bit of advanced planning, since dried beans are best soaked overnight, drained, and rinsed before cooking. I season them by frying a couple of slices of bacon, frying onion in the bacon grease, and then putting the crumbled bacon and fried onions into the beans while cooking. Ymmm ... pinto beans!

Sounds really good. I used a ham hock today. I usually boil them for a couple of min., them let them sit for a least an hour before cutting the stove on again. It doesn't take long to cook.

I woke up really early this morning and decided that pinto beans sound good. I went with the speed-soak method (bring to boil, let set for 1 hr). Am getting ready to fry up the bacon and onions and throw the whole kit and caboodle into the crock pot. Beans and cornbread for supper! Ymmmm.

I gave Stevo a break from the kitchen and made the ugliest, yummiest dish: potato, onion, corned beef and white gravy casserole. Ymmmmm

Today, I used the left over pintos and made chili with hamberger. Lots of onions, garlic, hot sauce, chili powder and cumin. Its good but not as good as Miles' at the brunchgate.

One of the things I love about chili, is that it can be so diverse and yummy. Kelly just made some last weekend that featured ground lamb and eggplant. It was amazing. I would love to have your chili too!. Still got some cornbread too?

I have pt this morning. I'm taking a bowl of chili to my pt guy. He has help me so much with my rotator cuff. He's also has Bud, with his new knee.

Mrs. DD has her last PT session today. She made Cathy's toffee/chocolate/pecan/saltines dessert. She even saved me a few crumbs.

Bud took him (Buds) new knee.
I'm happy to hear Joy had her last pt. Yum, that's a good idea for a "thank you treat". Maybe my pt won't be much longer. When I raise my arm, i gained 26 degrees since Mon. I'm almost there. Too bad it will be a long time (at least 6 mo.) before I can lift weights with my left arm. Oh hum, such is life.
