This list is DREADFUL... holiday foods to avoid (saw this link on CNN.COM):
http://www.health.com/health/gallery/0, ... 75,00.html
Are there any other foods to avoid?
Are there any foods to actually enjoy?

Screw those people. It's the holidays and I'm gonna eat as much junk as humanly possible. I'm going to enjoy every bit of it. They don't have to worry about the cheese straws, though. Those things are nasty.

Yeah, that. I don't eat like that every day, so I'm damn well going to enjoy the yummy food at the holidays rather than spending my time worrying about how "bad" it is. Bring on the fat and calories!

I am, however, willing to skip the creamed spinach.

Just another BS "Junk Science" article. Something to fill space...
Anybody who confuses a Rib Roast (a.k.a. "Prime Rib") for "Pot Roast" is clearly an idiot.
I just set my seven bone Rib roast out to dry-age and it will be the centerpiece of our Christmas feast.
And yes, there will also be Pecan Pie (along with Pumpkin and Reese's Peanut Butter Cup cheesecake) for dessert.

Where/how do you have it dry aging?

Looks like Miles has volunteered to drive. Wonder how many he can seat in his vehicle...
We'll have a crowd showing up at the TNTDevil abode...

The old Mazda3 can't fit many adults so I'll just borrow Kelly's Tribute. Seats 4 adults comfy and there's room in the back for about 3 more as long as it's not: Lavabe, CBaB or EJ.

Looking like you pick up Bud and Nancy on your way to the Triangle and slip them into the back. Ozzie can come to my house and you can pick us up in Raleigh. He can be the co-pilot. That leaves room for 2 more...
Hey, wait a minute, since when does the Tribute seat 7? I thought that was basically a Ford Escape/Mercury Mariner and I didn't think they had 3rd row seating...

You are correct, it only seats four comfortably. The other three have to sit in the way back. That's why the back three can't be our tallest three crazie-talkers.

From the sound of it, none of the items are suitably served in ramekins.

I don't know man, you could make lil Personal Pecan Pies (PPP) or Personal Reese's Peanut Butter Cup Cheesecakes (PRPBCC). Both sound perfect for ramekins!

I set it on a wire rack over a half sheet pan. Then I cover it with an old, clean hand-towel. I then set this rig in the bottom of my "cold" refrigerator (1C/34F) where it well rest comfortably (with a change o' towel about every 3-4 days) until Christmas morn.
I will then remove it, rub it with Canola oil, salt, pepper, garlic & onion powder and let it rest whilst I fire up the grill with plenty of maple wood on the soak. I will then proceed to slow roast that b***h over the maple!
The dry-age process renders the beef a little squirrelly lookin' and it'll drop 1-1.5 kilos of water weight. But, once it hits the grill and the fat cap begins to melt...and the beef sucks up all that silky, maple-scented deliciousness... well... it's just damn good.
(h/t to Harry Peter er... Harris-Teeter for putting Rib roasts on sale just before Thanksgiving and to my local store for cutting a really nice one from the herd for me- a 7-bone,
10 kilo roast yum-yum!)

I'm short; I'll sit in the way back. Can you swing by St. Louis and pick me up?

That sounds awesome. I'm using the maple that I got too late for Thanksgiving for the ham I'm gonna smoke for Christmas dinner at Mom's house. (I'm buying them the smoker for Christmas as part of the gift, cooking the ham as the other part)
