Beets, What are they good for?

Absolutely nothing?
So we had some beets on the table today. They were from the can. I looked at the can. Of all the vitamins listed, all were 0 percent of daily value. Fiber was either 0 or 1%. I was always taught that dark colored veggies were good for you. So I ask, what are beets good for?
Does anyone have any inside information here? Thank you.

P.S. EarlJam fully recognizes that he could Google this (and likely will). The DBR Mods would turn beet red with anger over such a post.
But this is a virtual bar, right? I want to know what you guys think about beets. The Duke gods are often smarter than anything on Google.

It's unfortunate that the beets were straight from the can. Harvard beets are absolutely delicious! Maybe those canned beets were drained of their nutritional value by the processing. Take a look at this:

I like beets. I don't like the purple juice. It invades whatever else is on your plate.

Roast them with other fall vegetables and I might be interested. I roasted a chicken on a bed (instead of a rack) of veggies, including beets. The veggies caramelized nicely and absorbed the yummy chicken juices. This made beets tolerable.

Nothing, but possibly:
1) Sugar: I saw in the store that my sugar could come from sugar cane OR sugar beets;
2) Borscht: some people are into it;
3) Can't you use the greens?

Roasted beets!!! I love roasted beets, especially when you roast some turnips and potatoes with them. Ymmmmmmm.

I don't know if home canning is as bad, but commercially produced canned food is just calories and not much else. I'll eat frozen vegetables but I honestly cannot remember the last time I ate anything other than soup from a can.
Of course, what this really means is that if I survive the initial apocalypse, I'll be one of the first to starve to death because I have no canned food in the house.

Is beet salad just a local thing? I've had several delicious beet salads recently. They were made from raw beets and were quite good.

It's been a while so I'm not sure I can remember everything that was in the salad. Seems like it was a poppy seed dressing, though. I'll have to take notes next time I have one. Either that, or google the recipe.

I am not a big beet fan by themselves and the roasted beets sound interesting, but I can tell you they are absolutely terrific in a juicer mixed with other things like carrots, celery, etc....

Heh. I guess I'll have to try roasted turnips, because i haven't found any other way to make them palatable. But I'm totally with you on the roasted beets thing. I love fresh beets and like the color they add to the plate. Roasted is the best, as part of a roasted vegetable medley or in a salad.
