How do they do that without hurting the horses? I'm watching Young Guns II and all through the movie, during chases, gunfights, the horses take what look like VERY real spills, falls, etc.
Okay, it's the movies. I'm assuming they don't (or didn't) just sacrifice the horses for the shoot.
So how do they pull this off time and again without injury or death to the horses?

In the "early" days (as late as the early '80's) they were still using trip-lines to make horses take "endos" like you describe. Terrible for the horses and only slightly better for the stuntmen (yeah, they were all men back then) who had to perform the stunt. The horses almost always suffered, eventually, fatal injuries.
As soon as PETA, and other more vocal, well-connected celebs, came to power, the movie industry learned new ways to get the same effect. Therefore, you now see, in movies with animal "actors", the disclaimer: "No animals were harmed or killed in the making of this film..."
