We're a bunch of LTE slackers these days
With Thanksgiving around the corner....let's see if we can't liven this up a bit...
What is that ONE DISH that must be on the Thanksgiving table or it just isn't Thanksgiving (besides turkey!)
At my house it's a corn casserole. No casserole, no holiday

I have to have VDB's Pepperidge Farms dressing. I try to replicate hers' when we're not together for Thanksgiving, but it's always a bit off.

Re: LTE 2.0
Squash Casserole
2 pounds of yellow squash, sliced in cartwheels
1 stick of butter, melted (sometimes I use more)
Italian seasonings to taste
4 slices of bread, cubed (maybe I use more)
1 onion, diced
3 eggs
grated cheese (1-2 cups, to taste)
Boil the yellow squash in salted water until done and then drain.
Toss the bread cubes, Italian seasonings and melted butter.
Mix together the onion, eggs, cheese and squash. Fold in the bread cube mixture.
Bake in a 9 x 13 casserole dish at 350 until bubbly around the edges. This might take from 45 minutes up to an hour.
(I don't know exact measurements on any of this recipe anymore. I do it by "feel.") My kids have called me from their dad's house begging me to walk them through this recipe on Thanksgiving afternoon. I think that adding a little sausage to the recipe would step it up to a new level.

I have been looking for something unique to take to the dog training club Christmas party and I think this is the winner. I am thinking I might substitute Pepperidge Farm dressing for the bread cubes and absolutely throw that sausage and to kick it up a notch.CathyCA wrote:Squash Casserole

Re: LTE 2.0
I have a squash casserole that’s somewhat similar, and it uses Pepperidge Farm dressing. The middle has squash, carrot, onion, cream of chicken soup, and sour cream. Good stuff.

One of my neighbors has named their WiFi network, Muck Fichigan. Wonder where they are from. Ohio, maybe?

I have TARDIS and tlhIngan mah
Yes, I have two - one for the smart house (TARDIS) and the other for everything else. tlhIngan maH is Klingon for "We are Klingons"

None of you are slackers! LTE 1.0 is now less than half the length of LTE 2.0. Although we are trying to get to 20,000 for the 10th Anniversary coming up on December 20th. If you are so inclined - drop by and say hi. (We need about 270 more posts right now to get there.)
The time is out of joint, O cursed spite!

I make this, though with the addition of an egg, which makes it hold together a little better, IMO. Good shit, Maynard.windsor wrote:1 (8 ounce) container sour cream
